Yields 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (produces 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Combine the listed ingredients into a saucepan, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the heat and leave to reach room temperature entirely. Decant to a sterilised bottle, seal keeping it chilled, where it will keep for up to four weeks.

To make Cocktail Base: Mix the specified liquids in a sizeable container, let it rest for one hour, then strain best through a fine cloth, to ensure it's completely strained.

When ready to serve: Measure 85ml of the cocktail base into a cocktail shaker containing ice, and stir gently for about 60 seconds until cold. Filter into an frosted cocktail glass or a similar vessel, garnish with the cranberries and finish using a brief mist of mandarin oil over the drink.
